Yes, pinned websites open in the same browser through which they were pinned. For case, when you pin a website using Microsoft Edge, when you click the taskbar icon, the website will open in Edge. In the same way, if pinned through Chrome it will open in Chrome. As for people who may have their preferred browsers, make sure you create a shortcut from taskbar using your preferred browser.
